ONE PAN ROASTED CHICKEN THIGHS & GOLDEN POTATOES  W/ HOMEMADE TZATZIKI SAUCE

INGREDIENTS:
Homemade Tzatziki:
  • 1 container of greek yogurt
  • ½ cucumber - diced and seeded ( To seed: Lay the cucumber on a cutting board and cut the cucumber in half lengthwise with a sharp knife. Gently scoop out the seeds by gliding the tip of a spoon and dice).
  • ½ freshly squeezed lemon
  • 2 tbsp extra virgin olive oil
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • ½ tbsp fresh cracked black pepper
  • 3 tbsp fresh chopped dill

PREPARATION:

  1. Preheat your oven to 425 degrees with the baking sheet inside.
  2. Remove the chicken thighs from the Force of Nature packaging
  3. Pat the chicken dry with a paper towel
  4. Season the chicken heavily with the poultry seasoning, salt, garlic powder, and onion powder.
  5. In a bowl, season the cubed potatoes with a generous pour of extra virgin olive oil, garlic powder, onion powder, salt, and pepper.
  6. Remove the hot baking sheet out of the oven and place the cubed potatoes in the pan (you should hear a sizzling noise here)
  7. On the same pan, wedge the seasoned chicken thighs among the cubed potatoes
  8. Roast for 25 minutes and then drizzle some olive oil over the chicken thighs and place back into the oven for 20 more minutes.
  9. Add the tzatziki ingredients to a bowl, mix well, and set aside.
  10. After roasting for 45 minutes, turn off the oven with the baking sheet of chicken and potatoes inside, and let cool for another 15-20 minutes
  11. Remove the baking sheet from the oven
  12. Squeeze a lemon over the roasted chicken
  13. Drizzle the homemade tzatziki over the roasted potatoes and chicken thighs and enjoy!
